FUEGOína Sauce

INGREDIENTES:

10 oz Queso Fresco (Mexican Crumbling Cheese)
4 seedless and veinless Aji Amarillo peppers (can use half of a bell pepper)
3 tablespoon Extra Virgin Olive Oil
21 soda crackers (can add more to thicken sauce)
Preferred FUEGO at taste - start with 2 tablespoons
1 cup preferred milk (can add more to make sauce less thick)
Salt (if needed depending salt in chips/crackers)
Potatoes - peeled and boiled for the sauce to be poured onto

INSTRUCCIONES:

Start peeling and boiling potatoes in a pot with a bit of salt
After done boiling, slice potatoes and set aside
Cut up cheese
Cut peppers and remove vins and seeds
Put cheese, peppers, Fuego, EVOO, crackers, and milk in blender
Blend everything together
Taste the blend and add salt as needed
Serve potatoes and sauce on top
